Cut and peel of hard skin if purple Kand. Wash well, as it is sticky naturally..
Chopped big size roughly, cook in a cooker up to 4 whistles..
When cooker cools open it, chopped kand in equal size..
Take a kadhai, add oil, jeera, curry leaves, ginger chilli paste, saute it for 30 seconds.
Now add steamed chopped kand in kadhai, add grounded peanuts, sendha namak, chilli powder, black pepper powder, lemon juice, sugar, mix well, cover lid, cook for couple of minutes on a low flame. Turn off the gas.
Purple Kand ki sabji is ready to serve. Garnish with coriander. Serve hot and enjoy in fasting also.
