Step:

  1. Preheat Oven to 400F

  2. Line a broiler pan with Aluminum Foil

  3. Wash the Eggplant and slice long way into 4 equal slices.

  4. For "The Base": Brush the Extra Virgin Olive Oil (EVOO) on one side of each Eggplant slice. Sprinkle the Garlic Powder and some of the Grated Parmesean & Romano grated cheese on top. Flip over to the other side and repeat.

  5. "The Toppings": Spread some Pizza Sauce on top of the face up side of The Base. Now sprinkle the shredded Mozzerella & Provolone cheese on top of the sauce (to your liking).

  6. The Toppings are all optional. Whatever you like on a pizza, I suggest using. Place the remainder of "The Toppings" on your sauce and cheese.

  7. Sprinkle some Italian Seasoning and more of the Grated Parmesean & Romano Cheese on top.

  8. Bake on the broiler Rack in the oven for 20 - 25 minutes.

  9. Remove from oven and turn the broiler on.

  10. Place broiler pan in the rack and broil the Eggplant Pizza for around 2-3 minutes until The Toppings are slightly crispy.

  11. Remove from oven, let slightly cool, and enjoy!

  1. The "Crust"
  2. 1 large Eggplant
  3. 1/2 cup EVOO
  4. 3 tbsp Garlic Powder
  5. 1/4 cup Grated Parmesean & Romano Cheese
  6. The Toppings
  7. 1 can Pizza Sauce
  8. 8 oz Shredded Mozzarella & Provolone Cheese
  9. 1 packages Sliced Pepperoni
  10. 4 oz Can of Sliced Black Olives
  11. 1/2 each Diced Green Pepper
  12. 1/2 each Diced White Onion
  13. 4 oz Can of Sliced Mushroom
  14. 12 each Quartered Cherry Tomato's
  15. 1 Yellow Pepper Slices
  16. 1 Italian Seasoning (to taste)
  17. 1 Grated Parmesean & Romano Cheese (to taste)
