Step:

  1. Cover peas with water.

  2. Allow to soak several hours, or overnight.

  3. Drain peas.

  4. In a large saucepan, combine peas with water and salt.

  5. Simmer over medium low heat 1 hour, or until peas are tender.

  6. Drain peas, reserving 2 cups liquid.

  7. Saute' bacon, onion, and bell pepper until bacon is crisp.

  8. DO NOT DRAIN.

  9. In a 2 quart saucepan, combine peas, reserved liquid, the saute' mixture, rice, pepper, parsley, and tomatoes.

  10. Cover and simmer 1 hour, or until liquid is absorbed and rice is thoroughly cooked.

  11. *This recipe makes about 9 cups of Hoppin' John.*

  1. 1 cup dried black-eyed peas
  2. 4 cup water
  3. 3 tsp salt
  4. 4 slice bacon, cut into 1 inch pieces
  5. 1 medium onion, chopped
  6. 1 green bell pepper, chopped
  7. 1 tsp pepper
  8. 1 tbsp minced fresh parsley
  9. 1 cup uncooked long grain white rice
  10. 1 can (14 1/2 ounces) whole tomatoes with liquid, chopped
  11. 4 cup water
