Step:

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Add corn kernels, scallions, salt and red pepper flakes.

  3. Cook until softened, about 5 minutes.

  4. Add coconut milk and water and simmer until thickened, about 5 minutes.

  5. Remove from the heat and stir in cider vinegar and cilantro leaves.

  4. 3 sliced scallions, (white and green parts)
  5. 1/4 tsp crushed red pepper flakes
  6. 1/2 cup coconut milk

  8. 1 tbsp cider vinegar
  9. 1/2 cup fresh cilantro leaves
