Step:

  1. Make tomatillo salsa.

  2. Push through a strainer to remove all liquid, and measure 3/4 cup of the strained salsa.

  3. In a bowl, mix the 3/4 cup salsa, cream cheese, grated cheese, lime zest, green onions, and jalapeño sauce.

  4. Season to taste with salt and pepper.

  5. Place in refrigerator to chill for 20 minutes.

  6. In a separate bowl, mix cilantro and almonds together.

  7. Remove cheers from refrigerator and form it into a large ball.

  8. Coat the ball evenly with the cilantro/almond mix.

  9. Wrap in plastic wrap and chill until serving.

  10. Serve with your favorite crackers, crudites, etc.

  11. *This recipe makes 1 (6 inch) ball.*


Ingredients

  1. 1 tomatillo Salsa (see recipe on my profile)
  2. 4 oz cream cheese, room temperature, whisked smooth
  3. 8 oz grated cheese (I use Cotija from the Mexican Store)
  4. 1 zest of 1 lime
  5. 2 to 3 teaspoons green jalapeño sauce (I use poblano)
  6. 1 salt to taste
  7. 1 pepper to taste
  8. 1/4 cup cilantro leaves
  9. 1/4 cup chopped toasted almonds
  10. 2 green onions, cleaned, cut into very thin rounds, rinsed and dried
