1/2 cup warm water, 100 to 110 degrees
1/4 cup granulated sugar, divided use
1/4 cup evaporated milk, at 100 to 110 degrees
1/2 teaspoon salt
1/4 cup unsalted butter, at room temperature
1 large egg, at room temperature
1 large egg yolk, at room temperature
1/2 teaspoon vanilla extract
2 1/2 cups all purpose flour
4 cups canola oil for frying
FOR GLAZE
2 tablespoons heavy cream
1/8 teaspoon salt
4 tablespoon unsalted butter, melted
1 teaspoon vanilla extract
2 2/3 cup confectioner's sugar
2-4 tablespoons hot water
